据窄门餐眼数据,截至2025年12月31日,奶茶饮品行业门店数量下滑近3万家,同比下滑幅度超141.77%,且自2024年开始,奶茶饮品行业闭店数量超过开店数量,生死存亡,刺刀见红。

在激烈的市场竞争中,县域市场成为了一众奶茶品牌抢位的关键地带。

GeoQ智图《2025年连锁新茶饮门店发展蓝皮书》显示,2025年,三线及以下城市成为新茶饮开店的主战场,占比53%,一线城市新增门店占比仅8%,相对较低。

往低线城市扩张带来的不单是门店位置的分布变化,伴随着外卖大战的持续以及品牌自身对于价格的下探,“便宜”不再是中低价格段茶饮品牌的独属标签。

当喜茶、奈雪的茶推出个位数价格产品,甚至也可以通过“薅羊毛”的方式1元获得,茶饮品牌的价格边界开始变得模糊,原属于低价茶饮品牌的部分价格敏感型消费者开始流失。

凌雁管理咨询首席咨询师、食品及餐饮行业分析师林岳向「创业最前线」表示,随着中高端品牌的价格下探,以及外卖平台的各种优惠活动,茶饮产品的价格在终端消费者看来开始缩小差距,虽然品牌定位不同,但产品的价格带开始有重叠和交叉,在县域市场也同样如此,尽管中高端品牌的渗透率不如低价品牌,但依然会吸引来部分价格敏感型消费者。

消费者何何向「创业最前线」表示,自己虽然是“薄门”多年信徒,但在外卖大战时,会选择均价远高于益禾堂的霸王茶姬,因为霸王茶姬的优惠力度更大。

从产品端来看,奶茶里加薄荷正变成行业的常规操作,这意味着益禾堂的“薄门”也开始面临同质化的风险。

目前,一点点、书亦烧仙草、Yee3三号椰都推出了薄荷相关饮品,蜜雪冰城上线的薄荷奶绿更是以6-8元的低价“杀”到了益禾堂家门口。

意识到危机的益禾堂也在不断丰富自身薄荷系列产品的矩阵,但多位消费者向「创业最前线」表示,尽管有尝试益禾堂薄荷系列的其他产品,但并未出现像薄荷奶绿那样“口味无代餐”的感觉。

益禾堂还向「创业最前线」透露,品牌正尝试将薄荷系列的方法论复用到其他原料上,目前正保持着每月2-3款的上新频率,短期内也不会把研发资源全部侧重到薄荷系列上,而是与其他原料的饮品研发形成一种动态平衡。

「创业最前线」注意到,除薄荷系列外,益禾堂的产品矩阵还包括奶茶、轻乳茶、果茶、咖啡等,但下一款像“益禾烤奶”“薄荷奶绿”般的爆款还未出现。

益禾堂前研发部人员也表示:“爆款产品的诞生需要满足‘天时地利人和’,薄荷奶绿的产品创新思路不难复刻,难的是踩中下一个像薄荷市场这样未经开发的风口。”

在价格、产品都面临挑战的情况下,林岳认为益禾堂的机会是继续在县域市场扩张。他表示,当前茶饮品牌的增量空间是向下的继续渗透,去到真正的乡、镇、村,而不是在县城或商业圈扎堆。此外,对益禾堂而言,校园场景仍是重点发展的方向。

但在继续深耕县域市场之外,益禾堂亟需解决的是商标之痛。

5月31日,「创业最前线」打开益禾堂官网,一条《严正声明》弹出。

《声明》表示“益禾堂未开设任何子品牌,品牌名称上无任何前后缀,在益禾堂中添加前后缀、同声字、插改字的品牌均与‘益禾堂’无关,对于该类假冒侵权活动,益禾堂将坚决地打击。”

在此之前的5月14日,益禾堂还发布一则《官方声明》,称“网络上出现大量擅自使用‘益禾堂’品牌名称及标识的未授权账号,发布虚假营销活动,已涉嫌诈骗。”

天眼查显示,武汉熠汇饮科技有限公司(益禾堂品牌运营主体)涉及的2000多起司法案件中,身份多为原告,且85.23%的案件案由为侵害商标权纠纷,这表明益禾堂正处于较为严峻的商标维权阶段,而门店涉及地域广且分散的特点也进一步增大了维权难度。

北京岳成律师事务所副主任岳屾山向「创业最前线」表示,益禾堂所处的县域市场中,较多的侵权门店可能为个体经营户,分布零散、隐蔽性强,这就导致侵权行为难以被及时发现。其次,由于门店广阔而分散的情况,维权取证工作付出的时间与经济成本较高。第三,即便查处一批侵权主体,也极易出现更换店名、招牌继续经营的情况,侵权的现象难以杜绝。

进一步来讲,商标侵权的乱象,也会对品牌加盟模式造成了多重负面影响。

北京天驰君泰律师事务所高级合伙人马翔向「创业最前线」表示,真假门店混杂会让加盟商难以辨别加盟渠道,假冒门店的价格体系也会对加盟门店体系造成干扰,从而打击加盟商对品牌未来发展空间的信心。

“消费者也会因品牌真假难辨而不敢选择消费该品牌,并逐渐远离,最终可能导致品牌被消费市场抛弃。”马翔说。

客观来说,价格、产品、商标维权是益禾堂需要长期调整形成的“护城河”,但能不能活下去,却是加盟商每天都在面临的问题。对于拥有8000位加盟伙伴的益禾堂而言,“加盟商第一”绝不能只是一句口号。
