店内采用了黄色暖光、原木色货架、明档式布局,既增强了产品视觉效果、增加食欲,又营造了放松、温馨的氛围。

门店门口的中间位置是一组冷藏柜,摆放了短保的甜点、酸奶等产品,比如3倍冷萃希腊酸奶、奥利奥冰乳酪蛋糕等。冷藏柜上方有标签提示消费者要“冷藏保存、当天食用”。其中几款“水果夹酸奶”,保质期则更短,要求常温环境下1小时内、冷藏条件下8小时内。

经过冷藏柜,会来到门店现制的糕点甜点区,这类产品的保质期为2天。旁边是果脯和蔬果脆,以及需要当天饮用完的现制果茶、奶茶。

第三,则是利用店内的现场制售区,向消费者直接、透明地展示现烤坚果、烘焙甜点、红薯条等产品的制作过程。这些方式,都是门店对“新鲜”“健康”卖点的具体展示。

据悉,一栗的合生汇店开业首月销售额超过620万。此前有报道称,一栗2025年的收入为5亿元左右,净利润率水平为10%至15%。

整体来看,新鲜零食业态把可以现做现售的品类整合到同一空间,并通过门店内的细节设计,形成合力满足消费者对食饮产品“新鲜”的健康化需求。或者可以说,新鲜零食正推动行业从“价格战”转向“价值战”。

无负担的零食 轻量化的“山姆”

头豹研究院的相关数据显示,从2020年到2025年的5年间,新鲜零食的市场规模从不到50亿元增长到了180亿元,年复合增长率超过40%。可作为对比的是,休闲食品行业的整体增速为8%。

亿邦动力在探店中发现,新鲜零食品牌大口兽、清山森也在合生汇建起了店铺围挡。这意味着,合生汇内将至少有3家新鲜零食店“同台竞争”。这也恰恰是新鲜零食行业竞争愈发激烈的真实缩影。

在“新鲜零食”之前,“量贩零食店”刚刚作为新物种为行业焕发了一轮生机,还跑出了鸣鸣很忙这样的“量贩零食第一股”。而今,新鲜零食作为更新的物种,不免会被拿来和量贩零食做对比,甚至会因为量贩零食的战绩,被赋予更高的期待值。

新鲜零食品牌蒲妈妈的创始人郑政焕也是量贩零食行业的参与者,此前创立好幸福折扣零食,2025年转型创立了蒲妈妈。他向媒体表示,新鲜零食是折扣零食的一种升级形态,二者的底层均是性价比逻辑,让消费者花更少的钱买到更好的产品。

在郑政焕看来,“现场制作”是新鲜零食业态最显著的标志,而“新鲜出炉”对应的鲜度就是关键壁垒(现制多为短保产品)。在蒲妈妈门店的300多个SKU中,有约40%产品的保质期为30天以内。

华创证券的调研显示,金粒门门店内,保质期在5天以内的产品占比达46.1%,其预计短保产品贡献的销售额在门店总销售额中的占比会超过60%。此外,几多全门店内短保产品数量的比例约为29%。

跨界到新鲜零食业态的茶饮品牌柠檬向右,同样注重现制产品的比重。

位于上海的柠檬向右新鲜零食首店在6月4日正式开业。创始人徐柏鹤告诉亿邦动力,门店内SKU数超150个,现制现售产品的数量接近100个,预计贡献70%的营收。从保质期来看,店内大部分产品的保质期为1天至7天,少部分产品的保质期为15天、15天以上。

“店铺里大多数产品要现做才叫‘新鲜’,才配得上‘新鲜零食’这个名字。新鲜零食行业的热度,已经让消费者认知到零食的保质期可以是3个月了,未来是不是大家还可以把3个月缩短到15天、7天、1天?”徐柏鹤同样认为,“现制”既是新鲜零食的门槛,也是壁垒。

只是,食品线下业态中,以鸣鸣很忙、好想来为代表的量贩零食店,奥乐齐等硬折扣超市,还有山姆、盒马、胖东来等角色,几乎已经覆盖了消费者的各类需求,留给新鲜零食的生态位究竟在哪?

从新鲜零食门店的整体风格和售卖品类看,业内称之为“小山姆”。

在徐柏鹤看来,山姆的产品多以量贩装为主,分量较大。而新鲜零食店的产品分量较小,满足了一人食、小家庭场景等需求。同时,在国内市场,山姆门店的数量有限,为新鲜零食店去覆盖市场和承接需求提供了空间。

对于柠檬向右新鲜零食店来说,徐柏鹤将其定义为“网红鲜食零食店”,门店里汇集了行业里的网红零食、现制产品等。

此外,消费者对于零食是否健康的“不安”,也为新鲜零食店提供了市场。

“比如一些食品被曝光有残留,还有一些品牌用商标误导消费者,这类食品安全事件不断增多,会让消费者对产品越来越不放心。”新零售专家鲍跃忠向亿邦动力指出,“如今谁能把食品安全问题解决好,那就是个天大的机会。”

2023年量贩零食行业高速发展时,有消费投资人向亿邦动力表示:“你会发现,今天什么是不能被线上替代的,最核心的就是特定的产品和购买场景。食品零售就具备这样的特点:非标、即时消费、需要很多场景,这都是不能替代的。”

这一底层逻辑放到新鲜零食业态看依然成立,也是食品行业不断跑出“新物种”的原因所在。

又一个万店业态?

对比不同新鲜零食品牌的产品可以看到,同质化问题在业态发展的早期已经显现。

徐柏鹤表示,在从茶饮跨界到新鲜零食行业的过程中,产品研发和选品能力至关重要。

“一个商场里可能没有山姆,但可能有盒马、奥乐齐等商超。如果门店的产品与这些商超大同小异,那么生存空间几乎很小。所以,如何做出品牌的特色很重要。”他认为,好吃、性价比、有特色是未来新鲜零食品牌的出路。

徐柏鹤非常重视柠檬向右新鲜零食店的产品研发和选品。

为了提高门店产品的差异化,徐柏鹤会尽可能增加现制现售产品的比例,“这个是最大的差异化。”

在产品端,柠檬向右会基于销售表现好的品类再做产品创新。比如,徐柏鹤观察到,市场上贝果产品的口味大多偏甜和咸,为了做出差异化,柠檬向右研发了甜辣、麻辣、香辣口味的贝果,为消费者提供一种“既熟悉又陌生”的感觉。此外,在端午节期间,柠檬向右还上市了艾草吐司,基于吐司品类进行产品创新。

或许是处于行业发展早期,在业内人士看来,目前新鲜零食店的品类结构也存在优化空间。

鲍跃忠曾调研过两个新鲜零食品牌,他表示,从零售角度来看,门店目前的品类布局比较单薄,场景也没有搭建起来。“这两家店的店面都不是很大,商品数量在100-200个之间,没有感觉到商品的丰富性,商品之间的组合也比较少,有一种拼凑的感觉。”

鲍跃忠指出,想要做好零售业态,核心之一是要把商品做好,即“好物不贵”。“好物”代表了产品质量、产品创新,“门店要为消费者提供有价值的产品;同时,利用定制开发商品实现产品创新,也是‘做好产品’的重要方向。”而“不贵”则是避免价格虚高的情况。

“产品做好、价格做实之后,门店要向消费者表达清楚产品定位、产品满足的场景有哪些。比如一日三餐、下午茶、夜宵、露营等等。”鲍跃忠总结道,表达清楚产品的场景诉求,才能有效地吸引消费者购买。

蒲妈妈创始人郑政焕也在媒体采访中指出,产品创新、损耗、复购都是新鲜零食品牌们很关注的指标。

但这些问题并没有阻挡业态的爆发速度。

“2026年,是新鲜零食全国扩张的高峰期。”这是郑政焕对行业发展态势的判断。郑政焕表示,由于有运营量贩零食店的经验,他看到了被验证的路径,认为“规模”始终是上谈判桌的机会。而蒲妈妈当下的发展重点,就是前端的动销和规模。

有数据显示,2025年,量贩零食门店数将可以超过4.5万家,那么新鲜零食业态的天花板在哪?

从选址角度,徐柏鹤会选择商圈的高人流量楼层,如果商场连接了地铁,更倾向于选择地铁层。“新鲜零食店适配于购物中心,全国约有8000多家商场,也意味着可以开出8000多家新鲜零食店。”

中泰证券的研报显示,短期来看,新鲜零食业态开店天花板由优质商圈的存量决定,其中性估算行业短期合理存量门店约6000家。中长期来看,则要根据加盟模式的落地情况判断。

中泰证券认为,在市场扩容过程中,新鲜零食品牌若要获得长期竞争壁垒,需要加强供应链能力,以把控损耗率;同时关注产品差异化和食品安全问题。

对于未来新鲜零食业态的发展走向,郑政焕曾公开表示:“大家看新鲜零食业态不要只盯着‘新鲜’,随着行业发展,新鲜标签会慢慢弱化。未来,新鲜零食不会叫新鲜零食,一定是品质零食。”
