据行业分析,半成品菜2025年市场规模约为850亿元,预计到2030年有望增长至1850亿元。虽然绝对规模与预制菜大盘存在数量级差距,但年复合增长率约10.8%的速度,在所有预制菜细分品类中名列前茅。

而快手菜与预制菜之间的关系,也在变得越来越清晰。

虽然业内过去将快手菜视为即烹型预制菜,但据2025年9月的《预制菜食品安全国家标准》草案定义,预制菜是指“经工业化预加工制成,加热或熟制后方可食用的预包装菜肴”。这意味着,大多数仅完成清洗、分切等简单加工、以生鲜状态交付的快手菜在官方定义下并不属于预制菜。

这一定义上的区隔,让快手菜不用背负“预制菜”三个字在舆论场中积累的负面印象,在生鲜框架内享受消费者对新鲜食材的天然信任。

归根结底,快手菜不是从预制菜市场里切蛋糕,而是在“在家做饭”的人群中开辟新场景。在业内人士看来,“生鲜市场体量有多大,快手菜的天花板就有多高”。

当消费者越来越在意食材从何而来、是否新鲜、有没有添加,当监管越来越强调透明化与知情权,快手菜或将迎来更大的市场机遇。

站在预制菜行业结构性分化的历史窗口,属于快手菜的新故事,才刚刚开始。
